Refreshing Easy Vegan Greek Salad

Bringing a taste of Greece to your table, we’re halfway through Veganuary and have a brand new recipe. Bursting with vibrant colours and fresh flavours, this plant-based twist on the classic Greek salad is a testament to the simplicity and brilliance of the Mediterranean cuisine.

With fresh, wholesome ingredients and a zesty homemade dressing, this salad is perfect for a quick lunch, a side dish at a barbecue, or a light dinner. Enjoy the burst of flavours and the healthy benefits of this plant-powered favourite.

Ingredients

For the Salad

  • 1 cucumber, diced
  • 4 large tomatoes, diced
  • 1 red onion, thinly sliced
  • 200g vegan feta cheese, cubed
  • 100g pitted Kalamata olives
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • Optional: romaine lettuce, fresh parsley, chopped (for garnish)

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

1. Prepare the Vegetables

Wash and chop the cucumber, tomatoes, red onion, green bell pepper, and cherry tomatoes. Place them in a large salad bowl.

2. Add the Vegan Feta

Cube the vegan feta cheese and add it to the salad bowl. If you can't find pre-made vegan feta, you can make a quick tofu feta by marinating cubed tofu in olive oil, lemon juice, oregano, and a pinch of salt for at least 30 minutes.

3. Toss in the Olives

Add the Kalamata olives to the salad bowl. Their briny flavour will add a perfect salty kick to the salad.

4. Prepare the Dressing

In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust the seasoning according to your taste preferences.

5. Combine and Toss

Drizzle the dressing over the salad ingredients. Gently toss everything together to ensure an even coating of the dressing on all the vegetables and vegan feta.

6. Chill and Serve

Allow the Vegan Greek Salad to chill in the refrigerator for at least 15 minutes before serving. This helps the flavours meld together for an even more delicious experience.

7. Garnish and Enjoy

Just before serving, garnish the salad with freshly chopped parsley. Serve it as a refreshing side dish or a light, healthy meal.
