Quick Vegan Gingerbread Cookies Recipe

Get festive this holiday season and try a new guilt-free recipe over Christmas!

Ingredients:

  • 375g all-purpose flour
  • 1 tsp each baking powder and baking soda
  • 1/2 tsp each salt, ground ginger, ground cinnamon, ground nutmeg, ground cloves
  • 120ml each molasses, maple syrup or agave nectar, melted coconut oil or vegetable oil
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, sit for 5 mins)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.

  2. Prepare flax egg: Mix 1 tbsp ground flaxseed with 3 tbsp water. Let sit for 5 minutes.

  3. Combine dry ingredients in a large bowl.

  4. Whisk together wet ingredients in a separate bowl.

  5. Pour wet ingredients into dry, stir until well combined.

  6. Chill dough for at least 30 minutes.

  7. Roll out dough on floured surface, cut into shapes.

  8. Bake for 8-10 minutes or until edges are lightly browned.

  9. Cool on baking sheets, then transfer to wire rack to cool completely.

  10. Decorate with vegan icing or sprinkles, if desired.
